Stock

               Stock is a liquid produced from boiled with bone water cooked with mirepoix and bouqette garnie. cooked using medium heat ( simmering ) to remove the extract substance and dissolve with water.

Stock divided 2 :
- White Chicken and Fish Stock
- Brown Stock ( roast bone )

Ingredient 

Bone   :          600 gr
Leek    :          50 gr
Onion  :          1 pcs
Celery  :         10 gr
Carrot :          30 gr
Water :          1200 Ml

Mire poix
Onion
Celery
Carrot

Bouqette garnie

Leek, Bay Leaves, Thyme, Rosemary and Black papper.
